GOURMET PRESERVES OF RED-LEGGED PATRIDGES
The red-legged partridges of the Santa Rosalía estate are selected from the field, where they have remained a minimum of six months, under the conditions of a natural diet that, together with the benefits of a favorable ecosystem for its development, allow it to manifest the qualities that make it famous and that influence its gastronomic virtues.
The red-legged partridge, being a wild bird and therefore not being a commercial or industrial bird, has a very reduced and seasonal setting. In this way it transmits to its eggs all the essential nutrients for life, which make these eggs so special in terms of taste and essential nutrients.
We highlight all these special features in our stoves preparing a great variety of exquisite preserves, such as pickled partridge or partridge pate.
