From the conviction that a precise respect for the land and its products not only multiplies their health, but also their quality, in Saint Rosalia, the vines are cultivated in a natural way. Without forgetting the purest legacies of tradition, at the same time, the most innovative wine technologies are brought to the production process to obtain these famous organic wines.

WineryInterior 1The estate has a great oenological past, as was demonstrated when Patxi Garmendia he acquired it. Then, a winery from 1890 appeared. Since the purchase, its managers have investigated the wine-growing tradition of the land and this is how these wines are obtained, exclusively from organic farming. In this way, it is possible to provide indisputable quality to the estate's wines which, thanks to natural treatments, have delicate aromas and unique flavors.

On the Patxi Garmendia farm, located in the Burgos town of Vizmalo, there are different varieties of grapes planted that allow the production of different organic wines. From a Tempranillo, which is the queen variety, to a Verdejo through Viura, Garnacha or Merlot.

In it tempranillo, the richness of its grapes makes it possible to produce wines with great capacity for aging. For rosé, the youngest vines are used, combining them with Grenache grapes. It is a Spanish vineyard widely used in Spain, whose cultivation allows us to obtain fine, pleasant and perfumed wines. Specifically, in the region, wines with great character and structure are obtained, ideal for subsequent aging in oak barrels.Vineyards

Another grape variety is grenache. Planted on a plot of pebbles in Santa Rosalía, it is possible to advance its maturation and, in this way, obtain greater aromatic finesse, as well as freshness in the rosé wine. At the same time, it is accompanied by the Tempranillo variety.

For its part, of French origin (bordels), it is merlot, which is part of the mix in the estate's aged wines, to which it adds a fruity touch with the hallmark of the cassis, in addition to enhancing the complexity of the wine.

Viura It is a variety of Spanish origin. The wines it produces are straw yellow in color, aromatically have notes of pome fruit (such as pear) and water fruit (such as melon). In the mouth, it is unctuous. Its purpose is to obtain better maturation.

Barrels 1And finally, the popular Verdejo It is a native variety from the Castilian-Leonese region, which adapts perfectly to our soils and climate. As a result, it offers a white wine, with greenish reflections and great aromatic intensity (tropical fruits and fennel), very fresh in the mouth.

Once the grapes have been collected, they are moved to the winery, which has modern equipment, but respects the traditional methods of making organic wine. It has stainless steel tanks and an aging warehouse with new French and American oak barrels. And thus, different wines are obtained, which have obtained different national and international awards, which include white and white fermented in barrels, rosé, young red, oak, aged in barrels, selection or the private collection.
