Our estate Santa Rosalía can be found within the municipality of Vizmalo, in the province of Burgos. It is a quiet spot with a lot of charm where we have been breeding animals with the greatest of care and producing our magnificent wines for a number of years now.

In the case of the red-legged partridges and Wagyu oxen, we control the lifecycle of both specimens from the very beginning to the very end following a special breeding and handling system. This system has strict requirements that guarantee both the animals’ well-being and the quality and safety of the end-product that reaches the consumer.

In and of itself, thanks to its genetic characteristics, the meat from the Wagyu breed is one of the most highly-prized and revered throughout the world, both for its exquisite flavour and tenderness as well as for the health-boosting properties it offers for humans, as it contains nutrients such as the essential fatty acids omega 3 and omega 6. The flavour, aroma, tenderness and juiciness of this meat make it a healthy, unique delicacy that leaves no-one indifferent.

The red-legged partridge is a wild bird (and thus its culinary characteristics cannot be compared to those of commercial or industrial fowl) that lays few eggs and only seasonally, which means the eggs receive all the nutrients that are essential for life, making them a very healthy product with an exquisite flavour.

The organic wines we make are manufactured using only the best grapes from our vineyards, which are located around the winery. By using only ecological agriculture methods, our wines are of an unarguably high quality and have won a number of national and international awards. Thanks to the natural treatments the wines receive, they have very delicate bouquets and exceptional flavours.
