VINEYARD: Finca Santa Rosalía.
GRAPE VARIETIES: 100% Tempranillo
APPELLATION: Vino de la Tierra de Castilla y León.
HARVEST: Hand-harvested (small crates).
VINIFICATION: The grapes are sorted on a sorting table, destemmed and very lightly crushed. Maceration lasts for 10 to 12 days.
Alcoholic fermentation lasts between 12 and 15 days.
This is followed by malolactic fermentation, which takes place in new French oak barrels.
AGEING: The wine is aged in French oak barrels for 24 months.
This is followed by two years of bottle ageing (bottle ageing allows the wine to evolve and refine).
SERVING TEMPERATURE: between 16°C and 18°C.
DECANTING: Due to the natural production process, sediment may appear in the wine, as it is not subjected to any clarification or stabilisation process.
TASTING NOTES: A deep-coloured red wine with a cherry-red hue and garnet undertones, clean and bright. On the nose, it stands out for its intensity, with aromas of fresh red fruit such as strawberry and raspberry, accompanied by soft lactic notes. On the palate, it is elegant and silky, with well-integrated sweet tannins, good balance and an enveloping mouthfeel. A refined and persistent finish, with the subtle contribution of ageing in French oak.
